Ingredients

  • 2 medium zucchinis sliced into 1/4-inch rounds
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pizza sauce
  • 1/2 cup cooked ground turkey or chicken
  • 1/4 cup diced bell peppers (red, green, or yellow)
  • 1/4 cup sliced black olives
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  • Start by washing the zucchinis thoroughly. Slice them into 1/4-inch thick rounds to ensure they hold their shape during baking but still become tender.
  • Preheat your oven to 400°F (200°C). Place the zucchini slices on a baking sheet lined with parchment paper. Brush each slice lightly with olive oil and sprinkle with a pinch of salt, pepper, and half of the Italian seasoning. Roast for about 10 minutes to soften the zucchini and create a perfect base for your toppings.
  • Remove the zucchini from the oven. Spread about a teaspoon of pizza sauce on each round. Sprinkle cooked ground turkey or chicken evenly over the slices. Add diced bell peppers and sliced black olives on top. Finally, generously top each bite with shredded mozzarella cheese and the remaining Italian seasoning.
  • Return the tray to the oven and bake for an additional 8-10 minutes, or until the cheese is melted and bubbly with a golden edge.
  • Once baked, let the zucchini "pizza" bites cool slightly before serving. Enjoy warm as a flavorful snack or appetizer.
