Ingredients

  • 2 heads romaine lettuce halved lengthwise
  • 2 tablespoons olive oil

  • 1/2 cup croutons
  • 1/4 cup Greek yogurt
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • 1 clove garlic minced
  • 1 teaspoon Worcestershire sauce ensure vegetarian or substitute with soy sauce if preferred
  • turkey bacon cooked and crumbled for garnish (optional)

Instructions

Prepare the Romaine

  • Wash the romaine lettuce thoroughly and pat dry. Slice each head in half lengthwise, keeping the core intact to hold the leaves together.

Season and Oil

  • Brush each romaine half lightly with olive oil on the cut sides. Sprinkle salt and pepper over the lettuce to taste.

Grill the Romaine

  • Preheat your grill to medium-high heat. Place the romaine halves cut-side down on the grill and cook for about 2-3 minutes, until grill marks appear and edges begin to char. Flip and grill for another 1-2 minutes. Remove from grill and set aside.

Make the Caesar Dressing

  • In a small bowl, whisk together Greek yogurt, Dijon mustard, lemon juice, minced garlic, and Worcestershire sauce until smooth and creamy. Taste and adjust seasoning with salt and pepper.

Assemble the Salad

  • Place grilled romaine halves on a serving platter. Drizzle Caesar dressing generously over the lettuce. Sprinkle with grated Parmesan cheese and croutons. If using, scatter crumbled turkey bacon on top.
