Ingredients

  • 1 pound beef sirloin steak cut into bite-sized pieces
  • 2 tablespoons olive oil for searing the steak and roasting potatoes
  • 4 tablespoons unsalted butter creates the rich garlic butter sauce
  • 3 cloves garlic minced
  • 1 pound baby potatoes halved
  • 1 teaspoon garlic powder
  • salt to taste
  • pepper to taste
  • fresh parsley chopped, for garnish

Instructions

  • Preheat your skillet over medium heat. Toss halved baby potatoes in a bowl with olive oil, garlic powder, salt, and pepper. Add potatoes cut side down to skillet and cook for 10-12 minutes, stirring occasionally until golden brown and tender.
  • Season beef sirloin steak pieces generously with salt and pepper. In a separate pan or after pushing potatoes to one side, heat olive oil over high heat. Add steak bites in a single layer and sear for 2-3 minutes per side until browned and cooked to desired doneness. Remove steak from pan and set aside.
  • Reduce heat to medium-low and add unsalted butter to the pan. Once melted, stir in minced garlic and cook for about 1 minute until fragrant but not browned.
  • Return steak bites to pan with potatoes and toss everything in the garlic butter sauce. Cook together for another 2 minutes to meld flavors. Adjust seasoning with salt or pepper if needed.
  • Transfer to a serving dish and sprinkle generously with fresh chopped parsley. Serve immediately.

Notes

  • Use ribeye or filet mignon as alternatives to sirloin for different textures and flavors.

  • Store leftovers in an airtight container in the fridge up to 3 days; reheat in skillet to maintain crispiness.
