Ingredients

  • 1.25 cups buttermilk
  • 1.5 cups all-purpose flour measured correctly
  • 1 tbsp granulated sugar
  • 1 tsp baking soda
  • 0.25 tsp salt
  • 3 tbsp unsalted butter melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 medium bananas mashed (about 1 cup)
  • 2 tbsp olive oil divided, to sauté

How to Prepare Easy Banana Pancakes

  • Step 1: Combine Dry Ingredients. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking soda, and salt.
  • Step 2: Mix Wet Ingredients. In another bowl, combine the buttermilk, melted butter, eggs, vanilla extract, and mashed bananas. Whisk until smooth and well combined.
  • Step 3: Combine Wet and Dry Mixtures. Pour the wet ingredients into the dry ingredients. Gently stir until just combined.
  • Step 4: Heat the Skillet. Heat a skillet or griddle over medium heat. Add 1 tablespoon of olive oil to the pan.
  • Step 5: Cook the Pancakes. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes, then flip and cook for an additional 1-2 minutes.
  • Step 6: Serve Warm. Remove the pancakes from the skillet and keep them warm while you repeat with the remaining batter.
