Ingredients

  • 12 oz pasta of choice
  • 2 cups roasted red peppers (jarred or homemade)
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
  • Parmesan cheese for grating on top
  • fresh basil torn leaves for garnish

Instructions

  • Bring a large pot of salted water to a boil. Add your preferred 12 oz of pasta and cook according to the package instructions until al dente. Reserve about a cup of pasta water before draining.
  • While the pasta cooks, add 2 cups of roasted red peppers to a blender or food processor. Pulse until smooth and creamy. Set aside.
  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes, stirring frequently until fragrant but not browned.
  • Pour the pureed roasted red peppers into the skillet with garlic. Stir in 1 cup heavy cream and 1 teaspoon Italian seasoning. Let the sauce simmer gently for 3-5 minutes until it thickens slightly.
  • Add salt and pepper to taste. If the sauce is too thick, stir in a splash of reserved pasta water to achieve your desired consistency.
  • Add the drained pasta directly into the skillet. Toss well to coat every piece with the creamy roasted red pepper sauce.
  • Divide pasta among plates or bowls. Generously sprinkle with freshly grated Parmesan cheese and garnish with torn fresh basil leaves for an inviting finish.
