Ingredients

  • 1 cup Orzo Pasta
  • 2 cups Fresh Broccoli Florets
  • 2 cups Vegetable Broth low-sodium
  • 1 cup Shredded Cheddar Cheese sharp, freshly shredded
  • 0.5 cup Heavy Cream
  • 1 tablespoon Olive Oil extra virgin
  • 1 teaspoon Garlic Powder
  • 0.5 teaspoon Onion Powder
  • Salt and Pepper to taste
  • Turkey Bacon optional, cooked and crumbled for garnish

Instructions

  • Heat the olive oil in your pot over medium heat. Add the orzo pasta and stir frequently for about 2 minutes until lightly toasted and nutty.
  • Pour in the vegetable broth, then stir in the garlic powder, onion powder, salt, and pepper. Bring to a gentle boil, then reduce to a simmer and cook uncovered for about 7 minutes, stirring occasionally.
  • Add the fresh broccoli florets directly to the pot. Continue simmering for another 5 minutes until the orzo is tender and broccoli is bright green and fork-tender but still crisp.
  • Lower heat to medium-low. Pour in the heavy cream and sprinkle shredded cheddar cheese over the mixture. Stir continuously until cheese melts and sauce is smooth and creamy. Adjust seasoning as needed.
  • If desired, sprinkle cooked and crumbled turkey bacon on top as a garnish. Serve warm and enjoy!

Equipment

  • Medium-sized pot or deep skillet
  • Wooden spoon or silicone spatula
  • Measuring cups and spoons
  • Grater
  • Colander or strainer

Notes

  • Add a splash of broth or cream when reheating to revive creaminess and prevent dryness.
  • Substitute broccoli with kale, spinach, or asparagus for variety.
  • Use vegan cheese and coconut cream to make this dish vegan-friendly.
  • Omit turkey bacon or replace with crispy fried onions for a vegetarian option.
  • Adjust salt and pepper at the end and consider adding smoked paprika or lemon juice for brightness.
