Ingredients

  • 2 medium sweet potatoes peeled and diced
  • 1 pound chicken breast cut into cubes
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 lime juiced
  • salt to taste
  • pepper to taste
  • 1 red bell pepper diced
  • 1 cup corn frozen or fresh
  • 1/4 cup fresh cilantro chopped

Instructions

  • Peel and dice the sweet potatoes into bite-sized cubes. Dice the red bell pepper and chop the fresh cilantro. Cut the chicken breast into evenly sized cubes.
  • In a mixing bowl, add the cubed chicken breast. Drizzle with 1 tablespoon of olive oil, then sprinkle the chili powder, cumin, salt, and pepper. Toss to coat evenly.
  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced sweet potatoes and cook for 8-10 minutes until slightly softened and golden.
  • Push the sweet potatoes to one side. Add the chicken cubes to the other side and cook for 5-7 minutes until cooked through and lightly browned. Add diced red bell pepper halfway through cooking.
  • Stir in the corn and cook for another 2-3 minutes until heated through. Remove from heat and squeeze fresh lime juice over the mixture. Toss gently to combine.
  • Sprinkle chopped cilantro on top. Serve warm on its own or with grains or greens.
