Ingredients

  • 4 beef chops about 1-inch thick, bone-in or boneless
  • 2 ripe peaches halved and pitted
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey

Instructions

Prepare the Peaches and Marinade

  • Start by washing your peaches thoroughly, then cut them in half and remove the pits. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, chopped rosemary, salt, and black pepper. This marinade will season the beef and be brushed over the peaches for a luscious glaze.

Marinate the Beef Chops

  • Place the beef chops in a shallow dish or resealable plastic bag. Pour half of the marinade over the chops, ensuring they are evenly coated. Marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator.

Preheat the Grill

  • Heat your grill to medium-high heat. If you don’t have an outdoor grill, use a grill pan on the stovetop. Make sure the grill grates are clean and lightly oiled to prevent sticking.

Grill the Beef Chops

  • Place the marinated beef chops on the grill. Cook for about 4 to 5 minutes per side for medium-rare, or longer if preferred. Use a meat thermometer to check for doneness—135°F for medium-rare, 145°F for medium. Remove from grill and let rest for a few minutes.

Grill the Peaches

  • Brush the remaining marinade over the peach halves. Place them cut-side down on the grill and cook for 3 to 4 minutes until caramelized with grill marks but still firm.

Assemble and Serve

  • Serve the beef chops alongside the grilled peaches. Drizzle any extra marinade or additional balsamic vinegar over the top if desired. Garnish with fresh rosemary sprigs and enjoy.

Equipment

  • Grill
  • Grill Pan
  • Small bowl
  • Shallow Dish

Notes

  • Choose ripe but firm peaches to maintain shape while grilling.
  • Let beef chops rest after grilling to keep them juicy and tender.
  • Use a meat thermometer for perfect doneness, especially with bone-in chops.
  • Brush grill grates with oil before cooking to prevent sticking.
  • Try variations like adding red pepper flakes for heat or substituting herbs.
