Ingredients

  • 4 boneless, skinless chicken breasts lean and quick to cook
  • 2 cups Brussels sprouts halved, fresh and vibrant
  • 1/4 cup balsamic vinegar the star ingredient for that tangy glaze
  • 2 tablespoons olive oil to help crisp and caramelize
  • 2 cloves garlic minced, for aromatic depth
  • 1 teaspoon dried thyme adds an earthy herbal note

  • 1/4 cup chicken broth keeps the chicken moist and creates a delicious pan sauce

Instructions

  • Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and half of the dried thyme. Set aside.
  • Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add chicken breasts and cook undisturbed for 4-5 minutes until browned. Flip and cook for 3 minutes more. Remove chicken and set aside.
  • Add remaining tablespoon of olive oil to the skillet. Place halved Brussels sprouts cut-side down and cook undisturbed for 5 minutes to caramelize. Stir in minced garlic and remaining thyme, cooking for 1 more minute.
  • Pour in balsamic vinegar and chicken broth, scraping browned bits from the pan. Stir and bring to a gentle simmer.
  • Return chicken breasts to the skillet with Brussels sprouts and sauce. Reduce heat to medium-low, cover, and simmer for 8-10 minutes until chicken is cooked through and sauce thickens.
  • Transfer chicken and Brussels sprouts to plates and spoon the balsamic glaze over the top. Serve immediately.
