Ingredients

For the Chicken and Glaze

  • 4 bone-in chicken thighs skin-on
  • 1 cup apple cider
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • salt and pepper to taste
  • fresh parsley chopped, for garnish

Instructions

Preparation

  • Pat the 4 bone-in chicken thighs dry with paper towels. Season both sides generously with salt and pepper. Set aside.

Make the Glaze

  • In a small bowl, whisk together 1 cup apple cider, 2 tablespoons olive oil, 2 tablespoons apple cider vinegar, 1 tablespoon Dijon mustard, 2 minced garlic cloves, and 1 teaspoon dried thyme to make the glaze.

Cooking the Chicken

  • Heat a large skillet over medium-high heat. Add the chicken thighs skin-side down and cook undisturbed for 5-7 minutes until the skin is golden and crispy. Flip and cook the other side for 3-4 minutes. Remove excess fat if desired.
  • Pour the apple cider glaze into the skillet with the chicken. Bring to a gentle simmer, then reduce heat to medium-low. Spoon glaze over chicken and cook for 15-20 minutes, turning occasionally until glaze thickens and chicken reaches 165°F (74°C) internal temperature.

Finishing Touches

  • Remove skillet from heat. Sprinkle chopped fresh parsley over the chicken. Serve immediately with your favorite sides.
