Ingredients

For the Bread:

  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup water
  • 2 tbsp ground flaxseed
  • 1.5 cups mashed bananas (about 3-4 ripe bananas)
  • 0.75 cup brown sugar or granulated sugar
  • 0.33 cup melted coconut oil, avocado oil or oil of choice
  • 1 tsp vanilla extract
  • 1 cup chocolate chips (vegan-friendly), nuts, or any add-ins of choice optional

  • Step 1: Preheat your oven to 350°F (175°C). Grease your loaf pan or line it with parchment paper for easy removal.
  • Step 2: In a small bowl, mix the ground flaxseed with the water to create a flax “egg.” Let it sit for about 5 minutes until it thickens.
  • Step 3: In a large mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt. Set aside.
  • Step 4: In another bowl, combine the mashed bananas, brown sugar, melted coconut oil, vanilla extract, and the prepared flaxseed mixture. Mix until well blended.
  • Step 5: Pour the wet ingredients into the dry ingredients. Gently fold the mixture together until just combined. Be careful not to overmix; a few lumps are okay!
  • Step 6: If you’re using chocolate chips or any other add-ins, fold them into the batter at this stage.
  • Step 7: Pour the batter into the prepared loaf pan. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Step 8: Once baked, remove the banana bread from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing. Enjoy your Vegan Banana Bread warm or at room temperature!
