  • Step 1: Preheat the Oven - Start by preheating your oven to 425°F (220°C). A hot oven is essential for achieving that crispy exterior.
  • Step 2: Prepare the Potatoes - Wash the baby potatoes thoroughly under cold water. If using medium Yukon Golds, quarter them to ensure even cooking. Pat them dry with a kitchen towel.
  • Step 3: Mix the Ingredients - In a large mixing bowl, combine the potatoes with the extra-virgin olive oil, grated garlic, minced rosemary, sea salt, and freshly-cracked black pepper. Toss everything together until the potatoes are well coated.
  • Step 4: Spread on Baking Sheet - Transfer the coated potatoes to a baking sheet in a single layer. This allows them to roast evenly and get that beautiful golden color.
