Ingredients

  • 1 cup whole-milk cottage cheese
  • 2 large eggs
  • 4 teaspoons honey
  • 2 teaspoons ghee (or butter) melted
  • 1 teaspoon vanilla extract
  • 1 cup oat flour
  • 1/2 teaspoon baking powder
  • 1 pinch salt

Instructions

  • In a large mixing bowl, combine the 1 cup of whole-milk cottage cheese with 2 large eggs. Whisk them together until well combined.
  • Add 4 teaspoons of honey, 2 teaspoons of melted ghee (or butter), and 1 teaspoon of vanilla extract. Whisk until well incorporated.
  • In another bowl, mix together 1 cup of oat flour, 1/2 teaspoon of baking powder, and a pinch of salt.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  • Place a non-stick skillet or griddle over medium heat and warm it up for a few minutes. Add a light coating of ghee or butter.
  • Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for about 2-3 minutes until bubbles form and edges look set. Flip and cook for another 2-3 minutes until golden brown.
  • Transfer pancakes to a plate and keep warm while repeating with the remaining batter. Serve hot, drizzled with honey or topped with fruit.

Notes
