In another bowl, beat the 8 ounces of cream cheese with an electric mixer until smooth. Gradually add in 1/2 cup of melted butter, 3 large eggs, 1 teaspoon of vanilla extract, and 16 ounces of confectioners' sugar. Beat until light and fluffy.
Gently fold in the coarsely crumbled Double Stuff Oreo Cookies into the cream cheese filling.
Pour the cream cheese filling over the chocolate cake layer in the baking pan, spreading it evenly with your spatula. Bake for 30-35 minutes, until the edges are set, and the center is still slightly jiggly.
Once baked, let it cool completely on a wire rack. For the best results, refrigerate for a few hours before slicing into squares. Garnish with whipped cream and additional Oreo cookies if desired.
