Ingredients

For the Filling:

  • 2 cups shredded cooked chicken use rotisserie for convenience
  • 4 oz cream cheese softened
  • 2 tbsp buffalo sauce adjust to taste
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup crumbled blue cheese or feta as a substitute
  • 10 pieces fajita-sized flour tortillas

Directions

  • Step 1: Preheat your oven to 400°F (200°C) to ensure crispy taquitos.
  • Step 2: In a mixing bowl, combine the shredded chicken, cream cheese, buffalo sauce, cheddar, and blue cheese. Mix until creamy.
  • Step 3: Lay out tortillas and spoon 2-3 tablespoons of the filling onto each. Don’t overfill!
  • Step 4: Roll the tortilla tightly around the filling, seam-side down on a lined baking sheet. Repeat for all.
  • Step 5: Lightly spray or brush the rolled taquitos with olive oil and bake for 15-20 minutes until golden and crispy.
  • Step 6: Let cool for a few minutes, then serve warm with your favorite dipping sauces.
